Knifehead also can't really reach Rodan if he's flying around. But if he does decide to get close, the sheer heat he puts off will cook Knifehead and he was tough enough to scrap with Ghidorah for a while before getting beaten.
Pacific Rim Kaiju while very large, come from a dimension that is primarily liquid and empty space, so they're a lot lighter to be able to get around and to satisfy their creator's purposes.
They show the dimension at the end of the first movie when Gipsy Danger detonates inside the breach.
Yeah, the mass numbers in Pacific Rim are wack. You could potentially attribute it to wacky, otherworldly alien biology for the Kaiju but, as Neme mentioned, the Jaegers are just as nonsensically light.
And it's even more jarring when you look at the fights and see the environmental destruction they cause, which wouldn't be possible if they were as light as the official numbers state they are. But, hey ho, that's what we're given.

It is worth noting that a while back, Travis Beecham, the screenwriter for Pacific Rim, did allegedly kind of soft retcon their mass, as can be seen here:

Now, I say soft reboot, because (A) he just provided information than wasn't available before and (B) he didn't exactly release it in any official canon material.
But if you take the new information, instead of weighing a measly 7,080 tons, Gypsy Danger, for example, should likely weigh closer to 45k tons and a monster like Slattern closer to 150k tons. Which does make a lot more sense but, as I said, isn't in any official canon material. Also, some debate whether this tweet is even real or not. So, still safer to stick to the really dumb values from the official guide from 2013 (or whenever it released).
The writers themselves admitted at the time though that they were supposedly rushed (which is a lazy excuse IMO) when coming up with the numbers, but it is what it is. According to official canon, Gypsy Danger is pretty much the equivalent of a 6'0" man weighing barely a few kilograms.
