So Asteroth said that she could eventually eat the universe and then multi-verse if left to feed. Now how would she fare against Eternity of universe prime?

The last scan says no such thing. It says that she grows in power with the more she consumes. She'd start with the galaxy, then the universe, then the mulitverse. They also say BRB spared his universe and theirs by defeating Asteroth.
And that was only the small portion. The full Asteroth should easily be able to consume Eternity without trying.
I see where your going with this, but it was mentioned that as she grew in power her being would be more complete just like Galactus/Hunger and all other cosmics that have to feed in order to sustain themselves.
The second part of your arguement is pure speculation, we don't know her limit, by "consuming the universe" she could have meant consuming it galaxy by galaxy.
And if only a fraction of her would have been capable of eating the universe, then why was she defeated by 2 high heralds and one low-mid herald? and a black hole?
How is it speculation? The full Asteroth was HUGE. If the small fragment had the potential to consume the entire multiverse eventually, the full should be able to do it quicker, or even in one-shot.
Why was she defeated by Stardust, and BRB? Isn't it obvious? She didn't grow in power at all. She never even consumed one galaxy.

Well you are saying that even a small fragment of her being had the power to eat the universe, so how is it that these three(two of them got subdued by Galactus' clap), can defeat a universe eater?
Cause IMO she would grow in her being as she feeds upon planets/solar systems/galaxies, so she would eventually be complete to be able to eat the universe/multi-verse.
But anyways, we are assuming that this is her complete being, so I don't even know how we got here.
The problem with Eternity is he has almost no way to defend himself. Everyone that has ever attempted to destroy him, or usurp his position has been successful.
If Asteroth wanted to eat him, I have no doubt she could do it without much resistance.
