Bit confused as ive read many interpretations of this re: when Sidious took or stole Maul from Mother Talzin at a young age was it because he saw more potential in Maul than Mother Talzin(as he didnt want to team up with her or make her his right hand etc) hence he(Maul) would have been more powerful than his mother or Sidious himself etc ?
Or did he only take Maul as a strategy to try to eventually defeat Mother Talzin later down the track ? What does cannon say about this?

More potential and he's at a younger age so he can be manipulated and trained easier. If he wanted to kill Mother Talzin so desperately he could've taken her on as an apprentice and just backstabbed her.
Palpatine originally went to Dathomir to train with Talzin -- to intermingle dark side abilities with Nightsister magics. But once Palpatine discovered Maul, he sensed a latent potential in him that was =/> Talzin, so he took Maul as his apprentice.
