He could have killed windu when he had him at sword point and many other times, and wanted to,convert Anakin and already put his life in danger to do it already, knows about Padme, knows that Anakin knows that he is the only way to save Padme, knows the Jedi are coming, killed Fisto, kolar, Tinn in 10 seconds flat, Aankin arrived the moment he was disarmed and the moment he was in the correct position. Plenty of evidence. Also you yourself say windu crushed Sidious. If he crushed him than he would have outright defeated end him earlier on. However he didn't and lasted until anakin got their which shows that he was able to hold him off long enough for his plan to work. Also palpatine had time to make a well devised plan for this. He also had a second blade aswell and we have seen it doesn't take him long to take out a lightsaber and in the shot when Anakin comes in he has plenty of time to whip it out and use the force to,push windu back or just roll over and get back up and start fighting.

Maul can last as long as he did but it's that it leads me to believe Dooku would last a lot longer and push Sidious further as he is better as a duelist and a force weilder. So while neither are on Sidious level of skill and neither would be considered "rivals" like yoda is to Sidious, Dooku would give Sidious the better fight.
