And no, saying how a Djem So duelist should fight is not good enough. Qui-Gon used a grounded strength based Ataru, so anything is possible.
If you want to argue Plo's skill you should use the fact that he disarmed Ventress who is a Makashi master, which puts heavy focus on avoiding disarmament as a counter to Shii-Cho, which focuses on disarming.

The mainstay of Ataru is fast-paced and purely offensive kinetic combat, failing to see how Jinn's choice to dispense with acrobatics a significant deviation that proves "anything is possible."
The mainstay of Djem So is strength, and it incorporates a two-handed grip on a fundamental level, in fact its in the opening stance. Granted an argument can be made that Koon favoured a one-handed grip, but to suggest he abandoned two-handed completely based on very few showings is largely an appeal to an absence of evidence.

It's not a few showings, and the consistancy is beyond explanation. Comic book artists had plenty of opportunity to depict him using two hands, yet they didn't. Suggesting that comics always skipped the part when he used two hands is pretty naive.
When you break it down it's really not as consistent as you make it out to be, first of all the only ones that are really relevant as those that depict lightsaber combat, as those are the only ones were strength would be a factor.
