Check this out

The single most astounding documentary I've ever seen on the original Star Wars. Nearly two hours of alternate takes, on-set B-roll, and dropped scenes in quality that must be seen to be believed. A must for any Star Wars fan.

Each chunk is about 30MB.
It kind of goes through ANH chronologically showing raw footage, outtakes, deleted scenes.
Nothing TOO spectacular, really, it's just nice to have all of these things together in one place... especially if you have never seen stuff like the Biggs scenes and Han and Jenny in the Cantina etc etc before.

Yeah.
One more doc featuring both ESB and ROTJ combined is planned by the same people, but there is far less available material.
It - if it ever surfaces - won't be as comprehensive as the ANH one.
