Not so much proof, more just logical deduction. Palpatine had for a while been placing mistrust in the jedi in Anakin's heart, having Mace standing over Palpatine with a lightsaber to his throat pretty much confirmed the lies that Palpatine had been feeding Anakin. There's also the fact that Palpatine clearly had a chance to finish Mace of early (his lightsaber stretched out against Mace's chest), and he didn't take it.
From your point of view. There is very little solid evidence there. IN fact, there is none... Not from teh movie, or from the novel. No special look, a thought in the novel. So if nothing can be taken as a solid hint, it is pure speculation. You may be right, but there's no way to determine that by canon sources. Maybe Lucas will enlighten us one day.
1. Palpatine was dominating the entire fight; murdering 3 jedi masters, and Mace couldn't do a damn thing to prevent it, and putting Mace, an aggressive fighter on the defencive. He was clearly dominating the fight, it's kinda surprising that Mace was able to disarm him period, let alone just as Anakin entered the room. Coincidence? I think not.
2. Palpatine was a master manipulator, probably the best ever and his foresight was incredible, it was not beyond Palpatine's intelligence and foresight to orchestrate such a thing.
3. We know that Palpatine faked being weak in the force, is it that far off to assume that he faked the lightsaber part too, especially considering how perfect the timing was. Also, need I remind you that Palpatine clearly had Mace at one point; his lightsaber was stretched out against his chest, yet he chose not to finish him off.
No, I think the most logical conclusion to come up with is that Palpatine threw the fight. If anything, Palpatine may have possibly not anticipated getting disarmed like he did (even though there's strong evidence supporting that speculation), however I think it's pretty obvious Palpatine was going easy on him.

1. Could it be that Mace was simply better at lightsabre fighting?
2. True, but that is pure conjecture in this specific case. he has been known to make mistakes, for instance he misjudged Padme in EpI. Maybe he misjudged Anakin as well in not telling the Jedi.
3. True, but he could have done that to prevent Mace from killing him. Besides he did a lot of that when Anakin came in, so it was probably more to manipulate Anakin than Mace.
So a logical conclusion is that we have no way of knowing either way.
Judged from the movie it seems that Sidious was lucky against Mace. Else he should have known exactly when Anakin would walk in the door (and maybe he did). And he should also know that Anakin would help him and not Mace - should know that Mace would kill him and not just arrest him.
1. Again, Mace is an offensive fighter, and Palpatine had him on the defencive; he was pushing Mace back, not allowing Mace to properly attack him. He, at one point, could have killed him - his lightsaber was stretched out against Mace's chest and he chose not to kill him. And the one thing that gives Mace an advantage in the fight, his disarming of Palpatine, happens just as Anakin enters the room. The timing was just too good, now when you consider that 'there are no such things as coincidences in the force', and that it wasn't beyond Palpatine's foresight and intellect, I think it's pretty safe to assume that Palpatine orchestrated it. So no, Mace is definitely not above Palpatine in lightsaber combat, I mean this is the same guy who was able to defeat 3 incredible jedi masters in seconds.

That is true, but seriously, the more logical conclusion to take is that Palpatine held back somewhat in the very least. I mean, of course we have no real way of knowing.. doesn't mean we can't deduce the most logical possibility.
