At this point it seems like Gunn would be back by now if they were gonna hire him back.
Since for now it's best to operate under the assumption he won't be back, I wonder who should be used to direct instead? And would it even be possible to use Gunn's script without him directing?

It would be possible for sure. Disney owns the script, and it sounds like if he doesn't return then they probably will use the script regardless. That said, if they do his name will still have to be attached to the film as a writer.
As far as the director, I really don't know. George Lucas?
