I'm pretty lost in the game once you beat the first 2 bosses. I'm trying not to see any spoilers. I have a melee build, int/faith build and my favorite is my Reduvia/frost Bandit knife build.
The key to progressing past that point comes from discovering the major NPC questlines. The structure for the second act of the game comes entirely from them.
I'd recommend trying out a friend's copy if at all possible. It's still very much a Souls experience, even if a more modern take on it. I can't reasonably tell you to get it if you didn't like DS3.
I love the shit out of these games, but I totally understand it's not for everyone.

All the things you didn't like about Dark Souls 3 are core aspects of basically every FromSoft game. Elden Ring is just Dark Souls on steroids. And yeah you're going to get 2-shot 90% of the game. This game (and franchise') formula is essentially that you're going to get 2-shot by any bosses on your level and 5-shot by bosses below your level. Yes there are tanky builds you can go into to alleviate that, but "borderline zero room for error, you will die 90 times to each new boss" will be a prominent part of your experience with the game.

TBF, I've found Elden Ring to be quite a bit easier than other Fromsoft games. The summons help a lot and the open world design gives you a lot of freedom to explore and level up without the need for grinding. Also, the checkpoints are a lot more forgiving now. Most bosses will have either a site of grace or a stake of Marika right before them.
Edit: Oh, and you gets tons of flasks later on.

It's times like these I'm glad I own the highest graded VGA copy of the first print (golden decal) Demon's Souls (PS3) deluxe edition. Got to be worth a fortune by now.
Regarding the earlier discussion about the strength of mages in the game, I echo style times point that there are a lot of situations where being ranged only really works against you. I'm trying to fight the first ulcerated tree spirit and at level 25 with only 12 vitality this shit is a ****ing nightmare.

The Mimic summon got nerfed. Looks like that thing was performing way better than From intended it to. Barricade got nerfed understandably too, as it was allowing most Greatshields to block with no stamina loss at all. Ashes of War like Hoarfrost Stomp and the one on the Sword of Night and Flame got nerfed too.
Although, it seems like shields collectively got their Guard Boost buffed due to Barricade being nerfed. In some ways, it could be even better to just passively have the extra Guard Boost. And you can still use Barricade, although the window is smaller now.
I don't know what the hard numbers are yet though.
