He-Man being empowered by an external force of infinite power makes him inherently scalable. It's in numerous canon that he can tap into far more power on average as needed, just as King Grayskull did against Hordak (A space cosmic vampire who ate all the old gods and universes)
This is because He-Man is essentially an avatar for "god". The Forge of Grayskull contains the fires of creation, for entire multiverses, and He-Man is their chosen champion. He's even shattered the sword and been killed and resurrected by them, to defeat a Skeletor who attained mastery over Time and Space.

Sentry's low and high showings are dependent upon Bob's mental state, but yeah let's begin low-balling to find a way for He-Man to win this. Owen couldn't defeat the Sentry because Bob didn't allow for that to happen, so yes Adam could likely defeat the Sentry if Bob was having a bad day, but not on a good day. Everything that Death Seed Sentry did could be done on any given day as long as Bob has the will to do it. The Sentry is a puppet, and it can't be truly killed. Did you forget that?
