Not sure what you mean, given weakened classic Odin fighting a portion of his own power (Infinity) was destroying galaxies as a side effect of them fighting. Furthermore Superman isn”t tanking the full gravitational force of a universe anyways, and that”s pretty hard to compare to casually blowing up galaxies.
I think Odin could replicate Superman’s feat, whether it be through sheer power or magic haxx.

Odin vs Infinity was a weird case. It jumped from "Galaxies to fall" to "It might destroy Planets" back and forth. Superman ran through the big bang *and* destroyed a structure capable of resisting it. I don't see how that's not Universal unless I'm missing something.
There”s also Odin”s battle with Seth where they were destroying galaxies as a side effect of fighting and were threatening the universe. And even then Odin was not at his best.
Regarding Superman”s feat, tanking the gravity of the big bang does not equate to destroying a universe/a universe level feat in colloquial terms. It”s impossible to compare resisting the gravity of a Big Bang (with great difficulty) and casually obliterating galaxies while hindered as a side effect of fighting. If Superman destroyed the Big Bang you would have a universal destructive feat.
Regarding the structure resisting it...wouldn”t Superman just be operating as the straw that broke the camel”s back? If the gravity of the Big Bang is already affecting the structure, it”s not evident that Superman would need to add an additional Big Bang gravity + level of power to destroy it. And again this would just fall into the bin of resisting the gravity of something versus actual destruction.

the shockwave of their fight ripples across every plane of reality, the fight was waged on every plane of existence, long dead galaxies shattered, distance dying suns ignited.
their fight was tearing the fabric of the multiverse, it could imperil untold galaxies
I think the idea that the galaxies have to be shown on-panel to be destroyed (even if the narrator literally says galaxies are being destroyed and threatened) is ridiculous. Pretty much the equivalent of saying the fight between DK and Perpetua wasn”t actually wrecking reality and they were really just throwing planets at each other because that”s what we see.

Right next to Yggdrasil. Seth states 2 times in that storyline that Yggdrasil is trans-dimensional and exists on all planes of reality. It's pretty much exclusive to that storyline though.
