I see no reason for Plagueis not to win. Dooku was still solidly below Yoda at this point, and Plagueis should definitely perform better against the Grandmaster.

Why would Plag win sabers? He's noted to dislike saber combat and knows it's a weak spot for him. Dooku on the other hand loves it and is a master of it. Plagueis isn't speedblitzing him, especially with the Vjun amp. So why would he win?

Plagueis wins because his brutality and Force reserves are going to push Dooku's shit in. Tyranus is more skilled, perhaps, but he isn't going to be able to bring that to bear if he's exhausted. It's going to take some time before Tyranus can outskill Plagueis, who's still his better in all physical areas. And by then, he'd have tired enough to be unable to beat Plagueis in a fight altogether.

Dooku isn't more skilled than Plagueis in pure saber technique?
So let's see:

What we know:
- Plagueis has a predictable style which Dooku would be able to exploit having to know the weaknesses of each form as a requisite of Makashi amped by his level of experience and skill in lightsaber combat in general.
- Venamis, like Dooku, enjoyed lightsaber combat whereas Plagueis didn't.
- Plagueis employs wild strikes lacking precision and finese which again Makashi would exploit.
Plagueis would be the agressor in a fight between the two and Dooku would play defensively by nature. Plagueis charges with wild power-attacks against Dooku. Dooku waits for a sloppy strike and disarms him or cuts off a limb.
