he saw the hobbits asleep in the old forest and thought thats strange, i wonder what they are doing or something...then it says 'he knew nought more of it, or ever did'

Maybe the fox is not concerned with Sauron and the Ring and whatever is happening in Middle-earth, just like the Eagles and the other animals, so he left the Hobbits alone.
Maybe he did hear of it, he just didnt want to get involved, like the ents at first. Maybe he thought it didnt really concern him so he went back to his little home. After all what can a fox really do
Maybe he never finds out what they were doing because he didn't want to find it out. Like OYEA said, perhaps he's not concerned with such matters. He just found it strange when he saw the Hobbits while he was there yet, while he was seeing them, but after that he didn't care anymore and just went away not carrying any concerns.
It just like a person seeing another person doing a strange thing on the street. At first you will find it strange and you will look at him, but then you will realize that it's not your business so you will then walk away and do whatever you are normally doing. And after that, after a couple of hours, you already forgot whatever you saw on that street. You don't care anymore.
"Hobbits!" he thought. "Well, what next? I have heard of strange doings in this land, but I have seldom heard of a hobbit sleeping out of doors under a tree. Three of them! There's something mighty queer behind this." He was quite right, but he never found out any more about it.
