Maybe it's due to the fact that in ROTJ, he's DIEING and needed his son to drag him all the way to the hangar bay.
And in ESB, well... when you've already got a specially made pressure chamber suited just for you, why NOT have a mechanical arm to put your helmet on?

They actually talk about it in SW Insider, 100th edition or whatever its called. It only allows machines to help. Something about him being "more machine than man." Huh, who'da thunk it...
I suppose that fried scalp can be very itchy? Even painful?
Supar Robobots with infrared aiming zystems and all the other shit must be way more accurate in helmet lowering than two artificial limbs ever could hope to be.
In addition, they could not find a suitable adjutant for the task. Three previous ones were strangled due to their incompetence.

Is there any explanation of why he needs a helmet and mask? Does regular air hurt him or something? I know it is fiction and all but what does he actually need it? Is he like a vampire and light will fry him? He still needs to breathe oxygen doesn't he? Maybe he's like the kid in the bubble and his immune system is really weak and germs will make him meet his doom. I have another theory that he just pretends he needs it to make himself more mysterious to the ladies.
All of his skin and most of his muscle-mass has been burned badly. The guy is pretty much walking around with several pounds of dead flesh and skin.
To prevent it from decaying, his helmet has a nice vacuum. With no oxygen, the bacteria are having a hard time decomposing his flesh. His own chamber has pretty much the same function. He has a breathing tube in his throat, so he will need no external oxygen anyway.

I demand to see Anakins medical papers.
His diagnosis. The head-droids ID who operated him.
Palpatines statements. His insurance policy.
Those documents are needed for me to win this debate.

Vader's life support system included a chest-worn, computerized control panel unit that regulated his respiratory functions. Three slot like dataports offered diagnostic checks of his pulmonary, respiratory and neural systems. On his belt, Vader wore two small system function boxes. The one on his right featured a temperature regulation system. On his left, he wore a respiratory sensor matrix. The center buckle featured an audio enhancement
unit built into the electromagnetic clasp

And so on and so on...

Ever wondered why he made that heavy breathing sound?
He actually had one of those "blow this to move" jokes infront of his mouth. So whenever he wanted to move, he would just blow the thing. Sadly the imperial engineers forgot about the two active microphones...
