Intrepid, somewhat direct movements are used in combination with very advanced techniques involving Force-powered jumps and motions. Form VII does not appear as fancy as Form IV, but the technical details of it use very open movements resulting in a very unpredictable battle style.
Form VII demands the emotional and physical intensity of Form V, but it much more effectively controls it (if mastered). Form VII, when fully mastered, results in extraordinary power.
However, as Mace Windu remarks in Episode III, Vaapad borders on the edge of falling to the Dark Side, as it channels one's anger and darkness into the attack. Only Windu's mastery and concentration of the Light prevents him from succumbing, which is why Vaapad is rarely practiced and very dangerous.
It is said that only two individuals ever outsparred Master Windu: Yoda and Dooku. (With dooku it would either be a stalemate or mace would win. When mace first sparred dooku, he was on the lightside, imagine how mace's vaapad would help him in a fight when dooku was on the darkside.)
Master Windu briefly fights General Grievous when the general and his forces overpower the Jedi and capture Chancellor Palpatine. Grievous is injured by Mace Windu using a Force grip attack on his chest, crushing the metal around his organs and causing Grievous to gain his coughs heard throughout Revenge of the Sith. ahhah! just thought that was funny.

Palpatine easily and swiftly slays Agen Kolar and Saesee Tiin. He kills Master Fisto shortly after. However, Sidious finds that Windu makes for a far tougher opponent.
Master Windu's long study of lightsaber combat and his mastery of Form VII combat and Vaapad serve him well in fighting Sidious, although the Dark Lord seemingly may have forseen this moment and planned for it accordingly. After Windu seems to get the upperhand Mace kicks Sidious' lightsaber away from the Dark Lord of the Sith just as Anakin Skywalker arrives on the scene (despite Windu's orders for Skywalker to stay out of this conflict).
Darth Sidious uses the moment greatly to his advantage and hurls Force Lightning directly at Windu from close range (Sidious has fallen onto his backside at this point and "looks" particularly vulnerable). This serves a clever and deviously implied purpose in the film as Windu uses his lightsaber to deflect the Force Lightning back onto Sidious, deforming and scarring the future Emperor's face in the process.
(Still doesnt annoucne who really won, it said that sidious dident expect mace to be that great of an opponent, and that he had a feeling anakin might come, but he was holding of for his life, and that he never realized that mace would make that great of an opponent, until anakin came in was when he changed his face from a nervous death look to a hppy smile knowing what would happen and planning for his next attack.

For those looking to speculate beyond the conventional explanations already supplied by Lucas and Jackson it could be imagined that there is deeper meaning to the color of Windu's lightsaber. One plausible theory could incorporate the difference in lightsaber fighting technique, as "Vapaad" (the style mastered by Windu), utilizes the light side (sometimes represented as blue) and the dark side (represented as red) sides of the Force, which of course mix to make purple. That is just more fan fervor for a Star Wars universe based explanation and is not part of official Star Wars movie lore. Another could make a case for Windu's skill level and mastery of lightsaber combat resulting in Windu having the ability to construct a uniquely colored blade, but again that is just more unofficial babble. Aside from color, his lightsaber is also unique in another way — only a senior member of the Jedi Council could have such an intricately designed lightsaber hilt as Master Windu.
