I was looking at it from a logical stand point.

the number 1 would be the starting point.

The number 1000 would be the end.

If you look at it as a journey, the mid point would be the number 500.

So when he says "I'm thinking of a number between 1 and 1,000" the mid way point between 1 and 1000 is 500.
