So far only Patrick Stewart (Prof. X), Sir Ian Mckellen (Magneto) havent signed on.
Hugh Jackman (wolverine) was in negotiations for a 2 movie deal (probably X3 and Wolvie spin-off) and Halle Berry is in negotiations.
The rest is all on bord.
And yes, Jean turned into the Phoenix.
