As Lupin said, the parents would not a werewolf teaching their students. Also, J.K. Rowling is not one to repeat anything, so that pretty much rules out Lupin.

I'm hoping that Lupin would come back to teach DADA, even though majority of the students' parents wouldn't want a werewolf as a teacher. But still, don't you all agree that he's the best and most fun DADA teacher ever!?
