bout the question - the language that was mainly used in the film is Sindarin, only few sentences in Quenya (I posted all of them in an other thread 馃槢 exaple would for instance be Saruman's spell awaking Caradhras - cuiva nwalca Carnirasse and so on - , one of Gandalfs sentences at the doors of Moria (ando eldarinwa, a lasta quettanya or something like that) or Frodo's sentence in the third movie - aiya earendil elenion ancalima). If you listen closely and compare them to the Sindarin ones (most of the other dialogues 馃槃 ), you will maybe hear the difference... Sindarin is softer, more practical for speaking, while quenya is clear and like a ringing bell, the not-so-flowing speaking sometimes makes it sound a little like spoken latin.
Another often used language is Rohirric (the original rohirric language was replaced by old english), language of the Rohirrim - interesting for example Aragorns words to Brego the horse where he mixes both.
