Dunno if this is traditional Scottish recipe or not but in any case - this is how we do it back home:

red wine
cloves
oranges
honey
ginger
lemon juice
brown sugar
cinnamon sticks
nutmeg
brandy to taste.

DONT boil it - and if you have the time roast the oranges and cloves first, makes all the difference.
