He didn't contradict himself. Luke was the last jedi, Leia only has the potensial to become a Jedi, she is not a Jedi.

Luke and Leia were way to old to become Jedi's. when they found Anikin he was to old. Maybe what Vader meant was pass it on to your children so they can begin where they're supposed to. Become more powerful i guess.
