Dooku's death and Anakin's almost death are pretty much solid like that, but Shaak Ti I haven't heard anything about. I don't think he'll have Grievous decapitate her, cause that'll take away from the Dooku death, maybe he'll do something else.

I dont think they will use the beheading thing twice. I like the run through idea better.
