In GTA 4, taking the helicopter to the ceiling of the level and then jumping out. It's a hell of a fall, and it's great if he hits something on the way down and lands on a car/person.

I'd build death-trap roller coasters that killed all the riders and drown people who littered. There would also be an island to put the people who got sick and threw up.
