Pastrami is thinly sliced beef cut from the whole round, fat trimmed, expertly cured hand rubbed with freshly ground pepper to excentuate the flavor. The seasoning can also include garlic, cinnamon, cloves, red pepper, allspice and coriander seeds! The meat is dry-cured, smoked and cooked. 🙂
