Her name was Leia Organa when she met Han, and then she married him and took his last name. So the answer is Leia Organa Solo.

She was adopted by Bail Organa.

First Skywalker, then Organa, then Organa-Solo (that last one is EU).

Hmm, I think she was never called Skywalker. Only Organa.

For me, it's just Princess Leia...

It's a movie, it doesn't matter. And when you read the EU where she's married to Han, it's fair to call her Leia Organa-Solo. But calling her things like Princess Leia Skywalker Organa Solo Naberrie Fisher Reynolds Lucas is a tad bit ridiculous, no?

BTW she woud never be called Naberrie, did you use your mother's maiden name when you were born? No, you use only your fathers last name, just as most people do.

I was just assuming that would be her name just before Organa adopts her.

Nobody has to say "Leia Skywalker" at all, but until the point where Organa officially adopts her, she is Leia Skywalker. Probably for all of 3 seconds lol.
