I only posted because you mentioned kangaroo.
Never had it, but over the years (thanks to various Soldiers i've worked with, as well as where i've retired) i've had jerky made of pretty much every type of ungulate, also bear, shark (ugh), snake and (ugh ugh) cuttlefish.
I'd give kangaroo a try!
