Each fight was written by different author. Wolverine's been able to cut through almost everything through his entire career, Thing ain't an exception.

They knew they were fighting each other, it was a team battle, old FF vs. new FF.
Merely hold him? He slammed him onto the ground while Logan was preoccupied... and paid for it.

Wolverine was crossing the line, Thing wanted him to calm down. He even called Wolverine a psycho for attacking him so violently, he didn't expect that Wolverine would go so far. This little accident doesn't count for more than the next panel, where Thing hits Wolverine when Wolverine doesn't expect it to come.

2. Once again, that was a team battle. He did mean to fight them.
3. If Sue hadn't used her forcefield, Wolverine would have stabbed Thing just like he did in Enemy of the State.

Wolverine actually made it back there and Thing was still kneeling, out of the fight.
