not all of the S.T.A.R.S. members had their asses handled. Chris and Jill survived. And Wesker cheated death and is enhanced with the T-Virus. I think he would be a good match-up against a Jedi. maybe not a master but at least a Knight.

I think a choke would be very effective against them.. So would a simple force push, they can also move with incredibly speed and cut of the arms of their enemy's in this fight...
