2) Vader vs. Luke from TESB even with the one in ROTJ
3) Vader vs. Obi-Wan in ANH (it's so classic) even with the one in ROTS

Personally, the Obi-Wan & Qui-Gon vs. Maul fight was flashy...but it was actually the most like the original duels...kind of.

You ar right about the TPM duel, it was flashy, and i think thats why i liked it so much. I think it also had some of the best emotion out of all the fight scenes from star wars.

1) Obi-Wan/Qui-Gon vs. Maul
2) Anakin vs. Obi Wan
3) Obi Wan vs. Jango Fett

maul and qui-gon was nice aswell. I know it was short, but it insinuated the power and threat of the sith.

the best fights were:

2Yoda vs. Dooku
3Sidious vs. Yoda
i chose number 1 because it shows how foolish ani was. it was the fight of a padawan and his master.
i chose 2 because it was the first time we saw the master of the force fight. it was actually pretty amazing to finally see how good this yoda was. he was supposed to be amazing but we never saw him in action.
i chose 3 because it shows yoda's failure to destroy palpatine.

Most touching/emotional fights:

1Luke vs. Vader-ESB
2Luke vs. Vader-JEDI
3Obi-Wan/QuiGon vs. Mau l

i chose 1 coz luke found out the truth about his father. it was pretty sad.
i chose 2 because Luke finally found the good in his father. it was sad when he unmasked him.
i chose 3 because the one who found the chosen one died. I liked QuiGon. It tried to show us that the sith should not be underestimated. I just love the part where obi-wan catches qui gons lightsaber and jumps up, that part was just too cool.

Overall: I personally love Ani vs. Obi-Wan. Best duel ever! The OT rocks and is in my opinion better than the PT anyways. May the force be with you!
