If lightsabres instantly cotterize wounds then why was Ponda Baba's arm bleeding?
Remember in the walrus-thing in the cantina? Why was his arm bloody after Old Ben severed it??

Maybe Lucas didn't think of it at the time, or Ben's saber crystal was old and losing it's power?

The nature of the lightsaber went under some transformations in the OT. Like originally the lightsaber was suppose to be heavy, but in ESB they changed that so now the lightsaber is lighter and very agile.

Well, what's really stupid is during AOTC, Dooku cuts off Anakin's hand, but it's hardly bleeding. Then when he hardly touches Obi on the arm, Obi starts to bleed pretty bad.

maybe it depends on what kind of cut it is.
if you cut a whole limb off ya it cotterizes the wound but if your just touched by it maybe youll bleed.
