This is a tough one. If this is Mace from ROTS I would say Mace has the edge on sheer skill because he had plenty of time to improve after Dooku bested him in saber combat around the time of TPM. But Dooku's darkside powers somewhat compensate for that. It would be an awesome battle but in the end I would say Mace wins by a hair or two.
