His original appearance was that of little less than a complete monster devoid of anything resembling sane human characteristics, he viciously abused Nemu, he tortured Ishida's grandfather FOR SCIENCE (Why is anyone's guess, lulz probably), and informed Ishida of it with a straight face, he had planned on doing the same to Ishida, although noted how he would allow him special priveleges, which are glaring examples of kindness such as only drugging them eight times a day, only operating on them four hours a day, allowing them to eat with their mouths and wear clothing to bed, and trying not to kill them. He comments how he has never shown a test subject such kindness. He was a remorseless monster.
Now he is more of a heroic sociopath, sure, he is still a jerkass dick, but his character has been made to be much more "human," if you will, he has shown to possess normal hobbies in everyday life, he is no longer antagonist towards Uryu as he once was (Who seems to have forgiven Mayuri overnight), and is much more comedic in nature (Assuming you all did not find him funny before like I did, although apparently I am in a minority).
His character has decayed because he is one of Kubo's favorite characters, he made him more human to cease conflict between him and Uryu for example so as to keep him around without conflict.

What hobbies are these? Every captain has become less of an antagonist since the end of that arc. Though I do agree that he fit the evil-villain role much better, he has not changed much. The circumstances through which they meet have changed.

To answer your question, Sajin, at first, did not really want to kill Kenpachi. If he did, he wouldn't have held back. Also, he would have went bankai and not wasted any time.
Same with Aizen. Obviously, he held back against Aizen. Explain Aizen not being launched into the ground other than Aizen using spirit force pressure stuff to hold his ground?
