Salt, pepper, little cayenne (spicy), probably a clove of garlic, little olive oil to help infuse the flavors. I would mash up the beans and tofu and cut up the mushrooms(add to the mash but don't mash the mushrooms) and probably throw them together with the seasoning and let it sit for a few hours to absorb them then mix with the rice and tomato and stuff the peppers and cook them!

but I might try it also with garden burger stuff too... ✅ they have those ones that already have spicey flavors in them
