The best way to do something like that is to sit in on an autopsy. Go to a hospital, tell them you're interested in a medical profession and request that you be allowed to view an autopsy. It worked for me, though you may have to try several hospitals until you find one that is willing and even then you'll have to wait until they schedule one. Works pretty well though to desensitize you to this shit.
