He comes back because of his healing factor, and the fact that when Hulk has punched him, he usually thinks that "small man" is dead and doesn't continue his assault for a reason. Then Wolverine comes and stabs him in the back. If Hulk would continue his assault, Wolverine's healing factor would not be able to compete with it.
