Right now, I'm only just starting to go through Kenshin, original Dragon Ball, and One Piece (After having read most of the latter's fan scans awhile back.)
Berserk is always good. Toriko is really fun, and Ippo, Seven Deadly Sins, and My Hero Academia are ongoing, and fairly fun (I'm not sure if Ippo has official releases, that one I keep up through Mangastream and the ultra quick and dirty translations for the newer stuff)
Honorable mentions:
Super Doctor K is Kenshiro from Fist of the North Star as a doctor.
Also, Ashita No Joe. I doubt many in the west ever read it, but it's a classic. Influences a lot of other manga.
