Yeah, I think the "polarity" would be better explained by him deceiving her mind into pulling inwards instead of pushing outwards with her FF via mind-based magic.

Quite possibly. Or else his magic just plain affected the physical mechanism of her power to do the opposite of what she willed. Either way, Loki could kill Sue with ease any number of ways. He looked like he was just having some fun doing it.

It's like how doctor who can accomplish nearly anything by reversing the neutrino polarity despite neutrino's having a neutral charge.
