Photon did not beat Sentry... he just teleported him away b4 Sentry got into serious business. Sentry was said to be holding back.

Photon beat him. Sentry lost that fight. Battlefield remove is considered a win. As for Sentry holding back, it's funny that he would when Photon was partly responsible for the Avengers getting wrecked by the Thunderbolt. Photon himself was holding off Sentry and teleporting Cap into Ironman's beam.
