I'm not sure it matters. Fett has used ion rifles previously (IG-88). I don't think there's any reason to assume that Grievous would be unaffected.

Grievous since there's no way Boba could possibly win - Grievous's chest plates are laser-proof. The only way to kill Grievous woule be to pull back the chest plates, as Obi-Wan did, but there's no way Boba could possibly get close enough to do that without gettingn decipated.
