Because eventually he probably would(which makes sense). But from the fight itself Logan doesn't even hit him not once and comments on Junzo being "slippery" and trained very well.(which is the reason Logan is struggling to hit him)
A tackle off the dragon that doesn't hit. Show me were in that picture is Logan hitting him with the tackle. In fact it doesn't even show Logan grabbing him or shoulder tackling hit or anything.

also later on in the fight wolverine makes connect with him again and states "you still bleed don't you"

Unless he did a back dash with Logan.
Show me Logan even making contact with him in his air tackle.
Logan does not connect with him. Notice when Junzo tags Logan with a kick he is sent back flying because he got kicked. Or when that pillar hits Logan you can see it making contact with him. Logan states that but fails to claw him. Actualy Logan states you still bleed don't ya? With a question mark at the end.
Saying one thing and actually doing it are very different.
