Giga Bowser can miss. Also so can Samus and the Pokemon Trainer. All you have to do is be on the other side of them and King Dedede's Final Smash hasn't been revealed yet.
You have misunderstood
If you attack with him like with say fire if it misses he can still ram you and get a few hits in, Samus if she misses she becomes Zero suit so she can still do damage even if she misses, since her transformation into Zero suit Samus is still part of the final smash. When He attack's with his Final Smash if he misses then well he misses, he has nothing to fall back on.
And on the subject of King D.
just because the Website has not revealed it does not mean other sources have not.
