Watch the movies. The spells move as fast as / faster than blaster bolts and are dodged / deflected on a regular basis. How does that work without superhuman speed?
That aside: Voldemort can read minds an cast spells with a mere thought. He can fly around in semi-corporeal form, vanish in a cloud of dust or teleport around at will. This while firing away with spells capable of blasting entire buildings into dust. Sounds like fun.

If the author of the books stated that a mere human with a gun is more dangerous than a wizard, then I doubt those spells were meant to travel anywhere near bullet speed.
With SW, it's made pretty clear that force users are supposed to move faster than a regular human. If we judge from how fast they are shown on screen, then force users are nothing but mere humans, and they shouldn't be able to evade or block blaster bolts, which I'm pretty sure are meant to travel just as fast (or perhaps faster) as bullets considering that SW tech is supposed to be light years more advanced than our own.
When talking about his duel with Windu and the "B-team," McDiarmid stated that his character was supposed to be 100 times faster than any other jedi, except for Yoda and Mace as per Lucas. This would include Kenobi, who has casually dodged blaster bolts from Jango Fett. Yet when we see Sidious in action, his attacks are slower than my grandmother's.

My point with this is, with SW we can't assume that the attacks are moving as fast as they are shown to us onscreen, blaster bolts included.
If Sidious is indeed far faster than your average jedi such as Kenobi, who can casually dodge blaster bolts, then he should be way out of Voldemort's league in speed. The speed of his attacks are such that he can cut down force users who possess superhuman reflexes before they can react, so he can likely attack Voldemort before Voldemort knows what's going on. Hell, even the speed in which he was hurling automobile-size senate pods was such that even Yoda had trouble dodging them and lost his balance in the process. Of course from our perspective the senate pods didn't look as if they were moving that fast, but when we consider that Yoda is a lot faster than the likes of Kenobi, who had no trouble evading blaster bolts, then we must conclude that logically the senate pods were being thrown pretty damn fast.
