So digging into it a bit more Zoltan Red Eagle had the rights to make a show for WoT for over a decade and recently released a CGI trailer in an attempt to hold onto those rights.

The widow of Robert Jordan said that as far as she knew the rights had passed on to Universal ( which it would have in a few days ) lawsuits ensued until Red Eagle allowed the rights to pass on.
Still getting the details on all of it but apparently the rights somehow passed to HBO. They'll be making a WoT fantasy series similarly to their adaption of GoT.

I still think the best way to do this is as an animated show in an anime style. A proper live-action adaptation would require far too high of a budget for TV and it probably wouldn't fair all that well as a movie series.
If you're looking for a good fantasy TV series other than GoT, American Gods comes out next year and it looks fantastic (the book certainly is).
Also Syfy's Magicians was released this year on Netflix and it was quite good albeit it pales on comparison to the books.
However, both series are very different from "traditional" fantasy, though that's a good thing IMO.
