Thor didn't even move the Earth in the midgard Serpent feat. Thus it was under 1 Earth weight of force. Also, the boat helped pull Thor back (who knows how much).
If Thor wasn't strong enough to lift it, he wouldn't have been able to hold onto the fishing poll.
Plus you're not taking into account that Thor had to deal with the serpent's strength as well as it's weight.
