But either way, Wolverine even being able to scratch Thanos's back is pis. They even had to retcon Wolverine not being able to stab Hulk.

It wasn't necessarily retconned. The Hulk Wolverine fought when he came to the whole realization that he could cut him was the Grey Hulk, who's durability isn't any where near that of Savage's.
