This Uatu Vs Odin not Rogue Watcher vs Odin. This Rogue Watcher seems to be tougher than your average Watcher. Anyway can Uatu beat Odin if Odin can do this?

Onslaught had little if any access to Franklin's supposed CELESTIAL level powers. To be honest I don't think he had much access to Nate's.Even if he had all of Nate's, and say like 1% of Franklin that is still not enough to beat Odin.
And if making a star is the height of Onslaught's powers, then Odin is far beyond. Odin was destroyong and creating stars in his battle with Forsung, was consuming the whole 616 universe in The Infinity Saga and dead Odin created a solar system, just as examples.
Galactus has advantages over Celestials given that
a) the Celestials know they cannot kill him
b) Galactus consumes the stuff from which the Celestials are directly made (as stated in Marvel Saga, the Celestials are like less Avatars of Eternity).
c) The Celestials were about to exterminate the entire Watchers species but just after Exitar wiped out the head Watcher, Sue used her forcefield to blow Exitar's armor up (her invisible forcefield are directly linked to hyperspace which has some elemental connection with the Celestials).
d) by feat Galactus is below Odin...
For example, Odin has never been punked by "a part of himself", a part of himself which he can summon at will from an Abstract entity who could one shot Galactus, yet 20 years earlier he was unable to summon from Reed Richards hand.
Marvel has spent the better part of the last 40 years making 616 Galactus look like a bumbling idiot.

Billions of Celestials> 1 Galactus
Agreed on ur last assessment and its a shame
Odin and Uatu only met once
