I dont know if its canon, though it probably is. I took from Wookipedia:
"When the Galactic Empire emerged, official records compiled by Sate Pestage stated that Koon's death had resulted from a suicide attack on a Neimoidian grub nursery."
I also took this from Wookiepedia:

That doesnt make sense, but it could be possible, though i doubt it.

Damn right. Plo-Koon just had enough for his small appearance in films because he so just damn powerful. When Plo-Koon approached him in anger, it was reported that GL shat his pants! Scared, GL killed him off, but little did he know. PLO KOON WAS IMMORTAL! Trying to kill him off made Plo-Koon into a frickin God!
