Anakin was blinded by his anger, Obi Wan is the master of a defensive form, making all his battles drawn out, Obi Wan kept running away, and Obi Wan taught Anakin pretty much everything he knew, and they had fought together so many times that Obi Wan could predict Anakin's attacks.

Also, being one of the most powerful Jedi Masters helps, too.

I think he was real, but if he could really create life, or stop people from dying, i don't know. And there was a novel being written(it was canceled) about Plegasus, so that could be a clue that he was real.
