What do you mean the plot? This isn't about which plot is better it's about which audiences these games are designed for. Zelda games aren't designed for mature audiences while gta, gow, di's are. the creators wouldn't recommend them to small children. That's the difference because most of the things you see in these games are far more adult than anything you see in a zelda game. If you ask a creator of zelda they'd recommend their games to small children and up because you won't see anywhere near the gratuitous violence, nudity, sexual overtones, etc. in these games.
Also being well thought out has nothing to do with which audience this game is being directed at. I disagree entirely with zelda games being more well thought out than gow. One series is ten years past it's prime while the gow series keeps setting the bar higher.
Let me ask you a question would you allow a 7 year old to play gow3? Now would you allow the 7 year old to play any zelda game?
Once again, you are missing the point entirely. Just because you wouldn't allow a child to play a game does not make it mature. BMX XXX is a perfect example. Its whole shtick is doing well enough in the game to unlock soft-core porn. Would I let a kid play, no, but the content of the game is merely adult, not mature.

I think what you are having trouble understanding is the exact meaning of mature here. This is maturity in the sense of being responsible, having wisdom from experience, being thoughtful or even sophisticated. The opposite of the immature, boundary-testing, sexually-controlled and impulse-following teen.
Stories like Zelda's demonstrate a great level of maturity with various darker elements that give adults just as much a sense of urgency and thrill as kids get from the "save the princess" goal.
Stories like GoW, with its focus on brutality, revenge, gore and sex, demonstrate a level of immaturity, directly appealing to teenagers still exploring their libido and reveling in the violence because they'd never be allowed if their parents knew what they were doing. It ties into the rebelliousness and desire to be seen as an adult that is the core of teenagers going through puberty.
