Yeah, it does. Not every character has to be 3 Dimensional. They just need to be constructed properly. Just most aren't. Squirrel Girl, being a parody of Silver Age superheroes and played for laughs, is constructed well. ๐
Edit: Another thing to keep in mind is it's okay to have a character like her so long as she isn't always there in the story. Marvel seems to use her properly enough so that she won't annoy people.

You've never read her comics. So, how does she come off as well constructed to you?
Making a character that seems to exist entirely for the purpose of beating up powerful characters doesn't really come off as "well constructed".
Also you're off on what a Mary Stu actually is. Being awesome and kicking ass isn't a Mary Stu. A Mary Stu is a an over idealised and hackneyed character who's just 'so totally special'. Squirrel Girl is not idealised. She's purposefully over-the-top and stupid. She isn't wish-fulfillment, she's a joke. A funny one at that.

Her powers his slightly super human abilities and the power to talk to squirrels. Yet she is able to beat incredibly powerful villains, conveniently offscreen. She is apparently the strongest character in Marvel. Why? Well I don't know. That's why it's a joke.

No, there are many, many different types of Sues. Squirrel Girl fits into the Parody Sue, in that she's written that way on purpose.
That does not, however, make her any good.
